Water in the Nectar
Forager bees bring sweet nectar to the hive. Nectar is very thin. It looks and feels like plain water. Drop some nectar. It splashes like a raindrop.
Nectar has a lot of water in it. It is not thick like honey yet. Nectar is more like sweet fruit juice.
Bees put this watery juice into wax cells. You learned about these hexagon shapes before. The wax cells act like little cups.
But the hive has a big problem. Thin nectar can go bad. It can spoil just like old milk left on a table.
The nectar can go bad. Then the bees will have no food. They must fix this problem quickly.
The Magic of Evaporation
Bees must change the thin nectar. They need to make it thick and safe. They do this by taking the water out.
This amazing process is called evaporation. Evaporation means water turns into an invisible gas. It floats away into the air.
Think about a wet puddle after a rainstorm. The warm sun comes out. The puddle slowly dries up and goes away.
Think about wet clothes hanging on a line. The wind and sun dry the clothes. The water evaporates.
The water in the puddle evaporated. The same thing happens inside the beehive. Bees need the water in the nectar to dry up.
The water leaves. Only sweet sugar stays behind. Scientists study how sugar makes the nectar special . The sugar makes the honey thick and sweet.
Comparing Nectar and Honey

Some bees collect the nectar from flowers. Other bees hold it in their honey stomach. Then they put it in the cells.
Next, they must help the water escape. How does the water leave the wax cells? The inside of the hive is very warm.
Warm air helps water evaporate much faster. Think about a bowl of hot soup. You can see steam float up from the bowl.
The water is leaving the soup. The warm hive acts just like that hot soup. The water in the nectar slowly turns into gas.
The Steps to Make Honey
Let us review the steps bees take. They follow a perfect plan every single time. Here is a picture of the steps.
Here are the four big steps:
- Bees put wet nectar into the wax cups.
- The warm air pulls the water out.
- The sweet sugar gets left behind.
- The food turns into thick honey.
But the wet air is still inside the hive! The bees need to move that wet air out.
Soon, you will learn a fun secret. Bees use their wings to push the wet air away! This amazing trick helps dry the honey even faster.
